Eggs are awesome.....Asparagus and Parmesan Scramble

I never used to be a morning (especially weekday) egg girl. But once I made the switch from fruit/toast to eggs I found myself much more full throughout the morning and my morning 'blood sugar' crash was no more. Switching from a high carb/sugar to a higher protein/fat breakfast is a guaranteed way to make your breakfast stick with you throughout your morning!

Most days, I have some variety omelette/scrambled eggs - even though I'm on a time crunch! It is possible, I promise :) I change up the ingredients depending on what veggies I have on hand - this week I'm all about asparagus.

Here was my breakfast this morning: 
Asparagus and Parmesan Scramble
1 egg
1/2 cup egg whites
5-7 asparagus spears
15g hard parmesan

Calories - 208, fat - 9g, carb - 4g, protein - 27g

Time saving tip:
- ziploc steam bags - I steam enough asparagus for a couple of days so in the morning I just need to grab it and throw it in the pan. Ziploc steam bags are a great tool for people in a rush. They work especially well with omelette friendly veggies like asparagus, broccoli and even sweet peppers

Calorie saving tip:
- if you are really hesitant to give up the cheese in your morning eggs switch from a soft/milder cheese (like medium cheddar) to a harder and more pungent cheese (like hard parmesan) - you'll need much less to get the same flavour, saving you significant calories
- if you don't have a food scale to figure out how much cheese you're eating, watch those portions and use the rule of thumb....literally use your thumb - your thumb is approximately the size of 1oz of cheese - I find if I switch to a stronger cheese, I only need approx half of that to do the trick!
- KETCHUP!!! if you are like me, eggs aren't quite the same without ketchup (sorry if I'm grossing out those ketchup haters lurking out there) - the problem is that ketchup is a highly sugar-laden condiment. A few years ago I made a switch to a low-sugar ketchup (PC blue menu makes a great one) and although it took a bit of getting used to the more tart flavour, now I can't stomach the regular stuff because it's so sweet. Make the switch and let me know what you think! 

Money Saving Tip:
- Costco sells cartons of egg whites for literally half the cost of regular grocery stores - stock up and throw the unopened ones in your freezer! They'll last well into your next Costco trip
