Portabella mushrooms are a great side for your dinner. Easy to make and prepare they are a 'meaty' and versatile vegetable to add to your meal that are both low in calories and very satisfying.
Garlic Balsamic Portabella Mushrooms - makes 2
Ingredients:
2 portabella mushrooms
1 tsp extra virgin olive oil
1 tbsp balsamic vinegar
garlic powder
1/2 oz (15g) cheddar
1) Preheat oven to broil at max heat. Set the top shelf on the most upper level.
2) Cut off the end of the stems of the mushrooms.
3) Pour half the oil and vinegar in each of the mushrooms.
4) Sprinkle on garlic powder.
5) Put in oven on a cookie sheet for approximately 5-7 minutes (or until mushrooms are tender). **Remember to keep the oven door ajar when using the broiler for recipes like this to avoid burning!
6) Take out mushrooms and top with grated cheddar. Put back under broiler until the cheese browns. Then you're all set to go!
