Mashed Cauliflower
serves 2 (big awesome sized servings!)
Ingredients:
- ½ large head of cauliflower
- ½ cup of cottage cheese
- sea salt and pepper, garlic (optional)
1) Steam cauliflower until quite soft.
2) Put into a deep bowl (I often use a measuring cup), add ½ cup of cottage cheese and season with salt and pepper or garlic to taste.
3) Using a hand blender, mix well. (Using a hand blender will make the mashing process much easier, and the addition of cottage cheese will make it much creamier - without it the texture isn't nearly as smooth)
4) If you have extra time, put in an oven safe container and then sprinkle a small bit of cheddar or parmesan on top. Put in the oven on the highest rack on broil. Leave the door ajar so the cheese doesn’t burn. Broil until cheese is browned.
