This holiday season I've developed a problem. Pistachios. I can't stop myself - and at 49 nuts to an oz, they almost beg me to eat them!
In addition to dessert, tonight I'm bringing a salad....so I only had one option. It had to involve pistachios. Taking a lesson from 'liven up your salads' I decided to try out a new salad tonight combining multiple types of flavours to make it much more than the typical dinner salad. Check out my creation!
Pistachio Pomegranate Mixed Balsamic Greens
Start with mixed greens. Now for the toppings. One place that people really lose track of their nutrition plan when eating salads is that they go way overboard on the calorie-laden items because when they prepare they just throw everything together. To ensure that you have balanced flavour and that you don't overdo any one ingredient, the way I put together a salad for multiple people is I approximate the number of guests and then multiply that number by the per person serving size I want for each ingredient. So tonight, for each person I added: .5oz of soft crumbled goat's cheese, 1/4oz salted pistachios, and 2 tbsp of pomegranate seeds. So tonight's salad I threw in 1oz of pistachios, 2oz of goat's cheese and 1/2 cup of pomegranate seeds.
Top with a drizzle of balsamic vinaigrette and you've got a colourful, flavourful, healthy (and quick!) salad to add to your dinner.
I tried this tonight Rachel, only since I don't like anything "goat" I added 'light feta'. It was DELICIOUS! Thanks so much, and please keep the salad ideas coming.
