10 minute dinner - faster than delivery! Broiled Bacon Wrapped Scallops

One great dinner that I absolutely love is scallops. They work really well not only for dinners, but also for appetizers, on salads or a decadent lunch. I bought mine at the market so they were really fresh and they made a fabulous weekend lunch.
Often scallops are seared in oil and wrapped in major pieces of bacon. For mine, they were broiled and I used half-slices of lean bacon to wrap around them. Another great option would be to use turkey bacon instead.

Broiled Bacon Wrapped Scallops
serves 2 as an appetizer or 1 for a meal

Ingredients:
4 large scallops
2 slices of lean bacon
seasoned salt
4 toothpicks
balsamic glaze (or balsamic vinegar reduced) - optional

1) Put rack in the top slot in the oven and preheat the oven to max-heat on broil.
2) Line a cookie sheet with parchment paper.
3) Slice each slice of bacon in half horizontally. Wrap one piece around the edge of each scallop and secure with a toothpick.
4) Sprinkle lightly with seasoned salt.
5) Put in oven on top shelf and broil. Leave over door ajar to avoid burning. Broil for 6-8 minutes, or until the tops of the scallops brown slightly and 'crack'.
6) Serve with a drizzle of balsamic glaze on top.

Approximate calories per scallop and 1/2 piece of bacon: 65, fat 3.5g; carbs 1.5g; protein 4.5 g;
