The underestimated little green tree: Broccoli

Broccoli - it can be highly delicious, is filled with good nutrients and it looks like a tree! Could it get any better? Broccoli is officially our Superfood of the week!

Broccoli is a cruciferous vegetable - like its friends cabbage, cauliflower, turnip and others. Cruciferous vegetables have cancer fighting agents and assist in liver detoxification. Broccoli provides Vitamins K & C, calcium and folate. It's also a vegetable with an extremely low glycemic load (a.k.a for a satiating food it won't spike your blood sugar)

There are many varieties out there now - two of my fav hybrids are broccolini (a combo between broccoli and kale) and broccoflower (broccoli and cauliflower).

When cooking it, don't overcook it! You'll lose lots of the great nutrients it has to offer. And don't forget - you can eat most of the stalk! Peel it, wash it and eat it!
