Yummify your broccoli with Creamy Garlic Goat's Cheese Sauce

To make vegetables more interesting, I often see people slathering on the sauce. What's that you say? But they're still eating vegetables....TRUE...but there's a way better way to have the best of both worlds. Eat your veggies - and healthy-sauce-them-up!

Today I decided to liven up a traditional favourite: cheese sauce. By incorporating goats cheese and spices together, I created an incredibly rich and creamy sauce that doesn't have to kill your nutrition plan. I added it onto our superfood of the week (broccoli) after I lightly steamed it and I got a fabulous tasting side dish in under 10 minutes. This is also a great option for gluten-free people and for those who have trouble digesting cow's milk (so they usually have to skip the cheese sauce!)

Creamy Garlic Goat's Cheese Sauce
makes approximately 1/2 cup (3 generous servings)

Ingredients:
2oz soft goat's cheese
1/4 cup unsweetened almond milk (can also use regular milk if desired)
1/2 clove pressed garlic
pinch of dried rosemary
salt and pepper to taste


1) Heat unsweetened almond milk in saucepan at medium heat.
2) Add in pressed garlic and goat's cheese. Using a whisk, 'mash' the goat's cheese into the liquid until smooth.
3) Continue whisking until smooth and heated all of the way through.
4) Add rosemary and salt and pepper to taste. Serve immediately over steamed vegetables.
