Strawberry-infused honey ginger grapefruit.....roasted and amazing!

My goal when I got my organic veggie box delivered was to use up everything in the box....and I had one major item left: the grapefruit. As a kid I used to eat grapefruit piled high with brown sugar...but obviously that isn't in my gameplan anymore. Today I thought up a new recipe and let me tell you - it's like a whole new world of grapefruit out there!


Strawberry-infused honey ginger grapefruit

Ingredients:
1 ruby red grapefruit
1/2 tsp of minced fresh ginger (approx 1/4" slice of ginger root)
2 tsp of honey
2 strawberries

Directions:
1) Preheat oven to 350 degrees.
2) Slice grapefruit in half and using a paring knife cut around the peel of the grapefruit (to loosen the segments and make it easier for eating later). Also, cut approx 6-8 slits along the segment lines.
3) Slice strawberries into thin slices and place into the cut slits of the grapefruit.
4) Sprinkle the tops with the minced ginger and drizzle honey overtop.
5) Bake in the centre rack for approximately 25 minutes.
6) For the last 5-10 minutes put oven on max broil to brown the tops.
Makes a great (and beautiful) addition to any brunch :)
