Greek-Style Frozen Yogurt - no ice cream maker or Yogen Fruz required!

This is a dish I make at home for myself a lot when I'm in an 'ice cream' mood but want something that won't set my blood sugar up for sheer disaster :) It also works beautifully as part of a post-workout meal when you want to mix things up from the regular protein shake. I make lots of different varieties but here is the most basic one. Stay tuned in the weeks to come for others!

Berry Vanilla Greek-Style Frozen Yogurt
makes 1 serving
Ingredients:
1/2 cup frozen mixed berries
1/2 tsp of vanilla extract (the real stuff! not the imitation stuff!)
and either:
1/4 cup vanilla yogurt + 1/2 cup plain fat-free greek yogurt
OR
3/4 cup fat-free greek yogurt + 2 packets of stevia

1) Combine yogurt(s) combo & vanilla extract and mix well in a shallow bowl (or a pie plate works great!)









2) Add berries on top and mash into yogurt w/ a fork.



3) Fold in mixture until berries are spread throughout evenly.





4) Spoon mixture into bowl and put in freezer for approximately 10-15 minutes - I don't recommend going any longer than that because you'll end up with a frozen solid yogurt block!

* another great addition to this mixture is a couple of tsp of unsweetened cocoa for a chocolate berry version!
