Strawberry Omelette with Dark Chocolate Peanut Butter Drizzle

I'm a creature of habit and so for me, omelettes are a staple to my day. But I always try to keep it fresh and different - I'm a creature of habit, but I get bored really easily! I don't always want savoury flavours, sometimes I want sweet. So how do you add sweetness to eggs without any added sugar? Fruit!

Yesterday I cooked up a strawberry omelette and because my usual salsa/low-sugar ketchup wouldn't be a very good pairing, I made a great topping that could be used on Oatmeal Protein Pancakes or crepes.

This is a high protein recipe, with good healthy fats. You can also get creative with the different fruits you can add - some of my favourites include mixed berries and peaches. Another idea? Adding 1/4 cup of cottage cheese to the omelette to up it's creamy quotient. Check out what I did with strawberries!

Strawberry Omelette
makes 1

Ingredients:
2/3 cup egg whites
1/2 cup sliced strawberries
cinnamon
1 tsp of coconut oil

1) Heat large frying pan on medium high and add coconut oil. Continue heating until coconut oil is hot.
2) Add strawberries and cook for 5-6 minutes until strawberries are soft (this process will allow the sweetness of the berries to really come out).
3) Pour in egg whites let cook most of the way through.
4) Sprinkle liberally with cinnamon.
5) Flip over half of the omelette making a 'half-moon' shape (for this to be successful make sure the omelette is almost cooked through before you attempt it!)
6) Slide it onto the plate and you're good to go!

Calories per omelette: 141; fat 4.7g; carbs 6.4g; fibre 1.7g; protein 18g;

Dark Chocolate Peanut Butter Drizzle
makes 1/2 cup serving (can be used on up to 4 omelettes - so if you're only making 1, put the rest in a covered container in the fridge and save it for later!)

Ingredients:
- 1/2 scoop of vanilla whey isolate protein*
- 1/4 cup cottage cheese
- 2 tsp of natural peanut butter
- 1 tbsp unsweetened cocoa
- 2 tbsp of unsweetened almond milk

1) Combine all ingredients into your magic bullet and blend until smooth! Easy breezy high protein topping for any of your favourite sweet breakfast foods. Blend it up while your omelette is cooking!

Calories per serving:49; fat 1.8g; carbs 1.7g; fibre .7g; protein 6.4g;

*if you don't want to use protein powder, reduce recipe by 1tbsp almond milk and add 1 package stevia
