I'm all about breakfast. I have my staple menu items, but it can get boring. Here's a great new way to liven up your brekkie and impress your guests! It's an awesome substitute for hashbrowns. It also makes a delicious dessert option that you can 'dress-up' with greek yogurt, berries or alongside a fitness-friendly creme brulee.
Oatmeal Crusted Apple Rings - serves 2
1 apple
3 tbsp rolled oats
1 tsp packed brown sugar
1 tsp cinnamon
3 tbsp egg whites
1 tsp coconut oil
* sidenote: I REALLY want an apple corer. I WILL get an apple corer!!!
1) Slice apples into 1/2" thick slices.
2) Preheat pan for med-high and add coconut oil. Let heat.
3) In a magic bullet/blender combine oats, brown sugar and cinnamon. Blend until smooth.
4) Dip slices in egg whites.
5) Dip both sides in oatmeal mixture.
6) Put in frying pan and cook each side for approximately 5-7 minutes (until browned)
7) Serve alongside greek yogurt, with fitness-friendly creme brulee or use them to replace your hashbrowns at breakfast.
