Avocado Chicken Portabellas - absolutely the most gorgeous mushroom dish around :)

I'm pretty sure I dreamt about this recipe...the textures and flavour combos could only be something from my subconscious mind - it's that tasty.

This recipe is great for an appetizer or a quick weekend meal. I think you'll love it - plus it's loaded with healthy fats and protein so it'll keep you full and satisfied!

Avocado Chicken Portabellas
makes 2

Ingredients:
- 2 portabella mushroom caps
- 1 oz soft goat's cheese
- 1/4 cup avocado diced
- 2oz chicken breast cooked, diced
- 1/2 tsp extra vrigin olive oil
- garlic powder
- balsamic vinegar/glaze (to drizzle)

1) Preheat the oven to 350 degrees.

2) Drizzle half of the olive oil onto each mushroom and sprinkle on some garlic powder.

3) Top each mushroom with half of the chicken and avocado, then top with goat's cheese.



4) Put in the middle rack of the oven and bake for 30 minutes.
5) After a half hour, set the oven to broil on maximum heat and drizzle on balsamic vinegar/glaze.
6) Put back into the oven for 5-7 minutes (or until cheese is browned)
