This is one of those great 'created-by-accident' recipes! I was making oatmeal on-the-go at work and didn't have any additional almond milk to add into it once it was cooked. All I had was my coffee. So after some experimentation, Mocha Oatmeal was created. If you love the flavour of specialty coffee Mochas this is a great recipe to put a special twist on your oatmeal!
Mocha Oatmeal
makes 1
Ingredients:
1/3 cup rolled oats
2 tsp instant coffee + 2/3 cup water (1/3 cup brewed coffee + 1/3 cup water)
1/2 -1 scoop of chocolate protein powder
1/4oz almond pieces
2 tsp unsweetened cocoa
dash of cinnamon
sweetener (optional)
1) Mix oats and coffee and water.
2) Cook in microwave for approx 90 seconds.
3) Stir in protein powder and cocoa powder.
4) Top with almonds, cinnamon and a couple of tbsp of your morning coffee w/ milk or plain unsweetened almond milk.
Calories (I used 1/2 scoop of harmonized vegan protein for these calculations but any protein isolate powder should have similar counts: 212; fat 5g; carbs 20g; fibre 4g; protein 22g
