Raspberries were on sale...and its FRIDAY!!! Rich Chocolate Raspberry Oatmeal

Happy Friday everyone! It was a long but productive week. So productive in fact that I got my grocery shopping done last night in between clients so I don't have to do it on the weekend. Happily, I saw that raspberries were on sale (for you Toronto readers, it's at Loblaws by the way).

I decided to make one of my favourites for breakfast in celebration of the influx of raspberries in my house. The egg whites in the recipe not only add protein to keep you full longer, but they also make the oatmeal super fluffy and light.

Rich Chocolate Raspberry Oatmeal
Makes 1
  • 1/2 cup quick oats*
  • 1/2 cup raspberries
  • 1-2 tbsp of unsweetened cocoa (2 is for the serious chocolate lovers)
  • 1/2 cup egg whites
  • 1/2 cup water
  • splenda (to taste)

1) Put oats, water and eggwhites in a bowl and stir. Microwave for approximately 90seconds (maybe more if your microwave isn't very strong).
2) Stir in unsweetened cocoa and splenda until well blended.
3) Top with raspberries and a splash of unsweetened almond milk (or regular milk if you prefer)

Calories: 251, protein 21g, fat 4g, carbohydrates 33g

I like to add 1/2 sccop of vanilla/chocolate whey isolate protein into mine for some extra protein.

* for you gluten-free readers, I use PC organic quick oats and they have never bothered me yet. You could also try Bob's Red Mill rolled oats
