Sitting at home after dropping off the lovely husband to work, it was time for breakfast....I wanted lunch-time food, but it was only 7:30am, so what's a girl to do? Combine them both!
Cheeseburger Saturday Morning Omelet
makes 1
Ingredients:
- 2oz cooked extra lean ground beef
- 1 low fat cheesestring (or 20g of low fat marble/cheddar)
- 6 egg whites (or 3/4 cup pourable egg whites)
- 3/4 cup sliced mushrooms
- seasoned salt and chili powder
1) Sautee mushrooms in a frying pan coated w/ a spray of extra virgin olive oil until browned.
2) Add in egg whites and ground beef, chili powder and seasoned salt.
3) Once almost cooked through add in the cheese and cook until cheese is melted.
Calories: 260, 8g fat, 3g carbs, 41g protein
