Rather than topping your eggs with sugar-filled ketchup, try this awesome alternative! She makes it and keeps it in her fridge in a tupperware to top on her morning omelette.
In a medium size container combine the following ingredients:
1 can of black beans, drained and rinsed
2 tomatoes diced
1 white onion diced
2 cloves of garlic(or however much you like) minced
The juice of one lime
A handful of chopped cliantro
1 tbsp. of olive oil
Salt and pepper to taste.
