Who needs hashbrowns when you have zucchini fritters?

I had an awful sleep last night so that meant that when I woke up this morning I was tired and grumpy and craving comfort food. Rather than reaching for the carb-and-calorie heavy world of hashbrowns, I got experimental in the kitchen and found a fabulous substitute.

Zucchini Fritters
makes approx 4 small fritters

Ingredients:
1 small zucchini
1 egg white
sea salt and pepper
1/4oz hard parmesan (optional)
1 tsp extra virgin olive oil


1) Grate zucchini into long strips.
2) Heat frying pan to med-high and add 1 tsp of extra virgin olive oil. 
3) Combine egg white, salt and pepper in a bowl and mix in zucchini until thoroughly coated.
4) Form into flat 'pancakes' and drop onto frying pan.
5) Top with thinly sliced parmesan (if using)
6) Let cook until browned on underside (approx 5-7 minutes)
7) Flip and cook until browned and crispy.
8) Serve alongside an egg white omelette and you're golden!
