Roasted Kiwi....Eating more than 1 is entirely okay :)

As noted in an earlier post, we got a great box of organic fruits and veggies delivered to our house tonight. Inside was a bag of kiwis....and the only way I'd ever eaten kiwis before was sliced up raw....but no more settling for sub-par kiwi dishes. Tonight things had to change. Enter: Roasted Kiwi.


Roasted Kiwi
makes 3 kiwis

- 3 kiwis, quartered
- 1 tbsp of honey
- 1 tsp of cinnamon

1) Preheat oven to 400 degrees.
2) Put tbsp of honey and cinnamon in a small pan and heat to boiling.
3) Dip flesh-sides of kiwi into honey and then place in baking pan flesh side up.
4) Put in middle rack of oven and bake for approximately 30 minutes.
5) Serve over greek yogurt or all by themselves. The skin will peel back easily and you can eat them just as you would a wedge of orange!

The flavour really shines after roasting and they are incredibly juicy. They would be a great side to tropical chicken dish or a topping to any dessert!
